Do I have to provide my passport when applying for a China visa?

Yes, you do need to provide your physical passport book when applying for a China visa.

The Chinese consulate or visa application center will place a visa sticker directly onto one of the blank visa pages in your passport.

Without the physical passport, your application cannot be processed, as the visa must be officially affixed and cannot be issued separately.
